What is wild rice?

Wild rice is a grain produced by a grass that grows in the shallow waters of streams, lakes and rivers in North America, chiefly Canada. It has long been an important food of North American Indians.

Despite its name, wild rice is not related to what we call rice in India. The scientific name of the rice we eat is Oryza sativa while that of wild rice is Zizania auactic or Zizania palustris.

Wild rice is high in fibre and protein. It contains phosphorus, potassium and B-vitamins while being low in calories and fat, and so it is sought after by health enthusiasts all over the world.
