How do you make Mushroom Soup?

Rich and delicious mushroom soup is wonderfully satisfying to enjoy any time of the year. It’s a hearty soup recipe prepared in just one pot, and is perfect to make even on a busy weeknight in only 30 minutes. 

Ingredients

  • Mushroom: 250 gm
  • Ghee: 20 gm
  • Garlic: 25 gm
  • Fresh cream: 20 gm
  • Onion: 40 gm
  • Salt to taste
  • Lemon: 20 gm Water 700 ml
  • Spring onion: 25 gm
  • Fresh coriander: 5 gm
  • Chopped coriander: 1 tsp

Method:

Heat ghee in a pan, add mushroom and cook till it turns dry. Remove mushroom from pan, and add garlic and onion in the remaining ghee and saute. Add the sauteed mushroom and water and bring it to a boil. Cook it for five minutes. Allow it to cool completely and then run it in a blender. Transfer the mixture to the pan and reheat it adding salt pepper, spring onion and cream. Serve hot garnished with chopped coriander leaves.
