  • Beetroot cut into cubes: 2
  • Onion chopped: 1/2 cup
  • Carrot cut into cubes: 1 cup
  • Garlic clove: 1
  • Minced fresh ginger: 1 tbsp
  • Water: 6 cups
  • Grated orange peel: 1 tsp
  • Sour cream: 3 tsp
  • Salt and pepper to taste
  • Oil: 1 tbsp

Method:

Heat oil in a pan. Add onion and fry until translucent. Add beetroot and carrot and cook covered for 5-6 minutes until done. Add ginger, garlic, orange peel and water. Slow boil for 25 minutes or until the vegetables turn soft. Turn off stove. Allow the mixture to cool Puree. Add salt and pepper. Serve with sour cream.

Ingredients

  • Spinach leaves, cleaned and chopped: 1 bunch
  • Onion, finely chopped: ½
  • Bay leaf:  1
  • Butter: 1 tbsp
  • Garlic, finely chopped: 1 clove
  • Water to blend: 1/4 cup
  • Milk: 1/2 cup
  • Crushed pepper: ½ tsp
  • Sugar: 1/2 tsp
  • Fresh cream: 1 tsp
  • Com flour: 1 tbsp (to be mixed in 1/4 cup of water and added)
  • Salt to taste

Method:

Heat butter in a large pan. Add bay leaf and sauté till it turns aromatic. Add finely chopped onion and garlic and sauté. Add spinach leaves and sauté on a medium flame for a few minutes till they shrink in size. Allow the mixture to cool completely and remove the bay leaf. Transfer the mixture to the blender and blend it until smooth, adding water as required. Now transfer the puree to the pan. Add half a cup of milk and salt and mix well. Bring it to boil. Add crushed pepper and sugar. Also add corn flour paste as required (the more you add the thicker the soup gets). Then pour the soup in serving bowls and top with fresh cream.

  • Chopped coriander: 1 tsp

Method:

Heat ghee in a pan, add mushroom and cook till it turns dry. Remove mushroom from pan, and add garlic and onion in the remaining ghee and saute. Add the sauteed mushroom and water and bring it to a boil. Cook it for five minutes. Allow it to cool completely and then run it in a blender. Transfer the mixture to the pan and reheat it adding salt pepper, spring onion and cream. Serve hot garnished with chopped coriander leaves.

  • Tomatoes diced: 4

  • Cream: 1/2 cup

  • Salt and pepper to taste
  • Croutons or pieces of crisp fried toast

Method:

Heat butter and saute tomatoes. Mash with a fork, add ginger, coriander leaves, salt, pepper and water and boil for 10-12 minutes. Pass the mixture through a sieve. Reheat and add cream. Serve hot garnished with croutons.

The burger topped with a RAMEN 'bun' that is proving a hit in New York City

The Ramen Burger is a trendy new dish in New York that sandwiches a meat patty between two 'buns' made of fried Ramen Noodles. Keizo Shimamoto, the guy who made it popular, used to be a computer programmer before he quit and moved to Japan to study Ramen full time.

Following the burger's overwhelming popularity, Mr Shimamoto, who hopes to eventually start a Ramen Burger restaurant, is doubling his efforts at next week's Smorgasburg with enough ingredients for 300 burgers.

The burger's secret ingredient is its soy-based shoyu sauce, which 'brings both sweetness and salt to the party,' writes Gothamist blogger Scott Lynch, who waited patiently in line for a taste.

To construct the noodle 'buns', Mr Shimamoto, former owner of Tokyo-based restaurant Bassanova Ramen, griddles patties of noodles in sesame oil until they are crisp enough to hold the meat and toppings.

While reactions to the burger have been mostly positive, some tasters have claimed it was not wholly worth the wait.

Kendrick Lo told the Huffington Post: 'Waiting so long on an empty stomach will make just about anything seem amazing when you finally get it.'

And Scott Lynch told Gothamist: 'It tastes (and mouth-feels) exactly as you would expect,' but that it 'could definitely use some jacking up, some fire and heat, like if they used red chili ramen'.

But as far as the unlikely combination of noodles and burger, the foods are apparently a match made in heaven.

'The burger is juicy and delicious,' said Kendrick. 'They cook it perfectly medium-rare and the ramen noodles work surprisingly well as a bun.'
